Oatmeal Waffles



My family are huge breakfast fans. I actually am okay with cold cereal everyday, but I realize that variety is a good thing! Here is a waffle that includes whole wheat flour and oats. I LOVE recipes that have extra health and taste great too! These are so filling and REALLY good! Enjoy!

2 eggs, beaten
2 C. buttermilk
1 C. quick-cooking oats
1 TBS. molasses
1 TBS. oil
1 C. whole wheat flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
milk, optional

In a large bowl, mix eggs and buttermilk. Add oats and mix well. Stir in molasses and oil.

Combine flour, salt, baking soda, and baking powder. Stir into egg mixture. If batter becomes too thick, thin with milk.

Cook on a hot, greased waffle iron.

Note: I made 1 1/2 batches to feed my family of 2 adults and 4 kids . . . using a belgian waffle maker. Yield will depend on the type and size of your waffle maker.

Whipped these up this morning - we LOVED them! THANKS! BTW - I can't get the printables to work lately...Not sure if it's my computer, or if it's a problem with the button. The printable screen comes up, but it's recipeless.
